The Umash Chronicles 2 - Bob Geldof dines at Tang Restaurant Dubai
I remember seeing Live 8 in London. Requesting my manager to go see the Concert even though I didn’t have the tickets and half the show was done. I left work early had few pints and shots, little tipsy, no buses on the streets, the roads were closed, walked almost 4KMS to Hyde Park. When I was nearing the concert I could hear the bands playing and the people who didn’t have tickets sitting outside the park and savoring the moment. I wandered along and saw a few hooligans holding a branch and climbing over the 4Metre fence to get a bit of the action. I knew this was my day, I helped a few of them to climb over and finally I made it. Jumped into Hyde Park, I know someone started chasing me, but somehow I managed to fade away into the crowd.

The Umash Chronicles 1 - WHO let the French out, WHO WHO! WHO WHO!
Don’t know who let the French out to Dubai; except for one...Stephane Buchholzer at Tang Restaurant seems a wise decision. What was in the General Manager's mind when hiring a Frenchman to Le Meridien Mina Seyahi to have his own vineyard, no not really? To explode into the scene of Molecular Gastronomy in Dubai. Stephane from the age of 14 has been experimenting with the Science of Food. I can remember him talking to me about making mustard ice cream at the age of 15. It had been his passion from a younger age to experiment with the trade he loves. Tang uses products such as Liquid Nitrogen, organic chemicals such as Sodium Alginate & Glucco to deconstruct food to bring out its best characters or even to create a new characteristic. “What’s next on Stephan’s mind? ...Hommus on liquid Nitrogen served with espuma of Arabic bread”?

Dubai Hotels 2008 - New to Ramadan? Do's and Don'ts this September
Ramadan Do’s and Don’ts: The local authorities become especially sensitive to social faux pas throughout Ramadan. Below are a few guidelines to keep you from offending anyone:
- Don’t eat or drink in public before sunset. This includes consuming anything in your car / taxi and eating chewing gum.
- Don’t smoke in public.
- Don’t wear revealing clothes throughout Ramadan.
- Don’t buy alcohol for a Muslim. While this rule applies all year round, penalties for breaking this rule are higher during Ramadan.
- When at “iftar” (breaking the fast after sunset), don’t begin eating before anyone else. The communal prayer will signify the beginning of “iftar”.
- Don’t try to coerce a Muslim into breaking his or her fast.
- Don’t show public displays of affection.
- Don’t raise the volume on your stereo or TV during prayer times.
- Don’t swear in public.
- Don’t stare or point at Emirati women. This is a general rule, but again,locals are especially sensitive to prying eyes during Ramadan.

Cooking at 196 degrees below zero - Liquid Nitrogen to make its debut at Tang Restaurant
When people think of cooking they often think of hot kitchens, hot pans , searing grills and lots of flames. But this is not always the case! There are a small handful of chefs around the world cooking at -196 degress with a medium called liquid nitrogen (LN2).
In coming months our very own Tang Restaraunt will join the small number of properties worldwide using this technique! Another first by the Le Meridien Mina Seyahi on Jumeirah Beach, Dubai.

Le Meridien "Taste of Discovery" Chef Challenge - Recipe for finalist entry from the Mina
Two members of the Mina family are the proud finalists in Le Meridien's "Taste of Discover" Chef Challenge, to be judged by acclaimed chef Jean-Georges Vongerichten. Stephane Buchholzer and Stuart Sage at the Le Meridien Mina Seyahi created the "Muesli & Yoghurt Langoff", which has been selected as one of the few recipes to enter the final round.
